Nancy works in the tasting room at the winery. Husband George is very fond of this recipe. In the summer, she always has plenty of fresh produce from the garden, especially tomatoes and zucchini! This is a very healthy meal – keeps George in shape for all his vineyard work! And it pairs well with one of his (many) favorite wines – Linden Vale Rosé!
Grilled Fish à la Nancy (Grilled Fish with Zucchini and Tomatoes served over Rice)

INGREDIENTS:

1 lb. Haddock
Olive Oil
Butter
Lemon pepper
Salt
Fresh Dill
1 Lemon
Italian Seasoning
1 Zucchini
Fresh tomatoes or canned stewed tomatoes
Brown Rice – cooked

DIRECTIONS:
Preheat Grill
Rinse and pat dry Haddock
Make a foil pan for fish, add drizzle of olive oil on bottom
Season fish with lemon pepper and salt
Slice lemon, use half for juice over fish, place remaining slices on fish
Top with fresh dill and about 2-3 tablespoons of melted butter
Cook on grill for 3-4 minutes (depending on thickness), turn fish and cook another 3-4 minutes more until fish flakes with a fork

Peel and slice zucchini and slice fresh tomatoes ( approximately equal amounts)
Sauté zucchini for about 3 minutes in olive oil
Add tomatoes – cook another 3-5 minutes till done
Add Italian seasoning
